Real chicken soup
REAL chicken soup when you have a cold or flu (or not). The garlic is important. It will help with your cold. this recipe may not be very quick, but it's really easy and worth making when you're sick. Trust me.
4 quartsCold Water
1Chicken in pieces
1 (or more)garlic cloves, peeled and crushed
1medium onion, cut into 4 pieces
2stalks celery, chopped
4 or 5 stems parsley
1/2 tspblack pepper
2medium carrots, chopped
Measure water into a large soup pot and add all the ingredients. Slowly bring to a boil, then immediately reduce the heat and simmer for about 3 hours. Remove from the heat and cool. Skim the fat from the surface.
Take out the bay leaf and the parsley. Mash the carrots, celery, and garlic and then stir them into the soup. Remove the skin and the bones from the chicken, chop the meat and add it to the soup. Season to taste.
